With the rising popularity of low-alcohol fruit wine, berry wine and fermented fruit vinegar worldwide, beverage manufacturers are constantly optimizing clarification processes to enhance product appearance and flavor stability. After alcoholic fermentation, fruit wine stock liquid contains a large number of yeast thalli, broken fruit pulp, pectin precipitates and tannin colloids. If treated by traditional sedimentation, the material needs to stand for several days, occupying massive storage tank resources and causing serious wine liquid entrapment loss in solid residues. Diatomite and plate-frame filtration will introduce filter aid impurities, affecting the pure natural positioning of fruit wine, and frequent filter cloth replacement brings heavy manual workload. These technical limitations restrict standardized mass production of high-quality fruit wine. Against this background, sanitary self-cleaning disc stack centrifuge technology has become the optimal clarification solution for fruit fermentation liquid with its additive-free, high-efficiency and fully automated separation characteristics.

Disc stack centrifuge is a high-speed dynamic separation device specially optimized for fermented beverage materials. Multi-layer inclined disc stacks inside the rotary drum greatly expand the settling area. When turbid fruit fermentation liquid enters the separation chamber, high-speed rotation generates strong centrifugal force. Heavy solid impurities including yeast, pulp residues and colloidal precipitates are thrown to the inner wall of the drum, while clear light-phase fruit wine accumulates at the center and flows out continuously. The equipment adopts automatic timing slag discharge structure, which discharges solid residues without halting production. The whole separation process is carried out in a sealed stainless steel cavity, isolating air oxidation to protect the natural fruit aroma and color of raw wine, and eliminating the need for any flocculant or filter aid addition.

First of all, the separation cycle is shortened from several days to several minutes, greatly improving line throughput and reducing the number of intermediate storage tanks, saving workshop investment. Secondly, no diatomite, gelatin or other clarifiers are added, realizing pure natural fruit wine production and meeting the market demand for additive-free healthy beverages. In terms of economic benefits, centrifugal separation minimizes wine liquid wrapped in solid residues, increasing finished wine yield by 1.5%–3% compared with filtration processes. Fully automatic slag discharge cuts labor frequency and auxiliary material consumption, lowering long-term operating costs. In addition, the clarified fruit wine has higher light transmittance, fewer suspended substances, and greatly reduced precipitation risk during shelf storage.

In complete fruit wine production workflows, the disc stack centrifuge is arranged right after fermentation tanks and before aging tanks. Fermented crude fruit wine passes through preliminary coarse filtration to remove large fruit peel residues, then enters the centrifuge for deep clarification. Separated clear wine directly flows into aging and sterilization procedures, while yeast and pulp residues are automatically discharged and can be recycled for by-product extraction. By adjusting rotating speed, feeding flow and slag discharge interval, the equipment can adapt to fermentation liquids with different pulp content and turbidity, realizing flexible production switching of multiple fruit wine varieties on one line. It can also be matched with membrane filtration equipment to achieve ultra-high clarity finished wine for high-end bottled products.

The standard processing flow of fruit wine disc centrifuge includes fermentation liquid cooling pretreatment, security fine filtration, sealed constant-pressure feeding, high-speed centrifugal solid-liquid stratification, continuous clear wine output, automatic timing slag discharge, and post-batch CIP full pipeline cleaning. Pretreated turbid wine liquid is stably sent into the rotary drum through a sterile pump. Under centrifugal grading, solid impurities are pushed to the drum wall and discharged regularly; transparent fruit wine overflows from the central outlet for subsequent aging treatment. After daily production completion, the intelligent control system automatically starts circulating cleaning to remove residual yeast, pectin and fruit pulp dirt inside the drum and pipelines, recovering stable separation efficiency for the next batch of fermentation liquid.
