Kale powder has grown rapidly in popularity as a convenient dietary supplement, favored by health-conscious consumers for its rich dietary fiber, vitamins and low-calorie properties. However, many low-grade kale powder products suffer from heavy sediment after mixing, faded color, severe nutrient loss and bitter taste. These quality defects mostly stem from outdated thermal concentration and rough filtration processes. Membrane separation technology provides an efficient, low-temperature solution to upgrade kale powder manufacturing.
In the conventional production workflow, fresh kale is crushed and pressed to extract raw juice. The crude juice contains fine fiber particles, pectin, macromolecular proteins and suspended impurities. Traditional filtration cannot fully remove these colloidal contaminants. Ultrafiltration or ceramic membrane systems are applied at this stage for clarification. As a physical screening process operated at ambient temperature, membranes intercept large suspended solids and colloids while allowing small molecular nutrients including polyphenols, minerals and chlorophyll to pass through. This step clarifies the kale juice, reduces precipitation in final powder and avoids heat-induced nutrient damage.
After clarification, the clear kale juice needs concentration before spray drying. The traditional thermal evaporator consumes massive energy and degrades heat-sensitive active substances. Nanofiltration and reverse osmosis membranes are used for room-temperature dehydration. Membranes selectively separate water from the liquid feed to raise solid content. Less water enters the spray drying tower, cutting energy consumption significantly. Meanwhile, partial organic acids can be removed to moderate the strong bitter flavour of kale extract.
Another advantage of membrane technology is cold sterilization. Ultrafiltration membranes trap bacteria and microbes without high-temperature pasteurization. The natural green colour and active nutrition of kale are well preserved, extending the shelf life of kale powder products.
It should be noted that membrane concentration is only used for spray-dried kale powder made from vegetable extracts. Directly milled freeze-dried kale powder does not adopt membrane treatment. Compared with simple mechanical crushing, membrane-processed kale powder features finer powder texture, brighter natural colour and better solubility.
For food and health ingredient manufacturers, membrane separation brings dual benefits: better end-product quality and lower operational costs. It has become a key competitive technology for enterprises producing premium plant powder and natural extract ingredients.
