Application of Membrane Separation Technology in Black Tea Extract Processing

Black tea extract is widely used for instant tea, bottled tea beverages and compound drink raw materials. The crude extract obtained from hot-water extraction contains abundant tea polyphenols, theaflavins, proteins, pectin, cellulose fragments and suspended particles. These macromolecular colloidal substances are the primary cause of cold haze, turbidity and sediment precipitation during low-temperature storage. Conventional processing relies on heating flocculation, filter aid filtration and thermal evaporation concentration. High-temperature treatment inevitably decomposes heat-sensitive aromatic compounds and active functional components, weakening the original rich tea flavor. Besides, the introduction of filter aids increases impurity load and brings extra separation costs.

Membrane separation technology offers a mild, all-physical processing route for black tea deep processing. The experimental samples clearly display the whole treatment sequence: raw black tea extract, clarified tea liquid, concentrated black tea liquid and clear permeate. The entire operation proceeds under low or room temperature, which fundamentally avoids thermal damage to tea flavor and nutritional substances.

In the clarification stage, precision membrane modules effectively intercept macromolecular proteins, crude fiber and unstable colloids that trigger cold turbidity. After membrane filtration, the tea liquid gains excellent transparency and long-term stability without adding chemical flocculants. In the subsequent concentration process, water selectively permeates the membrane, while valuable components including tea polyphenols, theaflavins and characteristic aroma substances are retained in the feed side. The transparent permeate can be reused for tea extraction to reduce water consumption.

Compared with traditional processes, membrane separation cuts energy consumption greatly by replacing thermal evaporation, shortens production cycles and lowers wastewater discharge. It effectively solves the cold haze problem of black tea extract and maintains the inherent mellow taste of black tea.
